The gluten-free diet

Nowadays many people are turning to the gluten-free diet, such as people suffering from an autoimmune disease or hyperactive children.

There are alternatives to foods containing gluten, whether barley or wheat, and among these we find:

Rice. Indeed, rice is a very good food that contains no gluten, and can be eaten cooked, served with steamed vegetables, in a salad, or in the form of flour. It is best eaten in the evening because of its glutamine content, which is good for the intestines.

There is also buckwheat, also called black flour. Well known among Arabs, who use it a lot in salads, it contains vitamin B and amino acids.

Millet is also well known in Muslim countries, and is a good alternative in this diet. It can be found in the form of semolina, cakes, or flatbreads.

There is also corn, which can be eaten in many different ways.

Oats, which should be chosen gluten-free, can be eaten at breakfast, for example.

Finally, there are foods such as quinoa or amaranth, the seed of the Incas, which will give you even more choice to vary your gluten-free meals.
